Sicilian Cheese Fondue

  • 1 lb fontina cheese
  • 1 1/2 cups whole milk
  • 3 tsp olive oil (from the olive salad)
  • 5-6 egg yolks
  • 2 cups Gambino’s Italian Olive Salad
  • 1 24" loaf Gambino’s French bread
  • salt & pepper to taste


  • Slice cheese thinly and place in bowl.
  • Pour one cup of milk and heat for 10 minutes in a double bowl (lower bowl filled with water).
  • Drain milk off and add cheese to hot oil and 1⁄2 cup of milk.
  • Stir well and do NOT let cheese boil over.
  • Add 2 cups of olive salad and salt and pepper to taste and serve warm.
  • Slice French bread to dip in bowl.
